Turkey pasta salad

2c corkscrew pasta
1c cooked chopped turkey
1c chopped celery 
1 med onion chopped
1 med G pepper chopped
1 pkg ranch dressing
1 c mayo
1 c ( 8oz) sour cream
1 tsp garlic powder
1/2 c slivered almonds 
1 tsp paprika

Cook pasta . Drain & rinse . Place into a large bowl . Add turkey , celery, onion , and green pepper . Toss & mix . Combine ranch, sour cream , mayo, and garlic . Mix well. Sprinkle with almonds & paprika .

Speedy Swedish meatballs

2 lbs frozen meatballs 
2 tbs flour
1 can beef broth 
1 1/2 c milk
1/4 c sour cream 
1 pkg egg noodles 

In large skillet cook meatballs until thawed and browned . About 10 minutes. Transfer to a bowl .
 Add flour to skillet and cook 1 minute . Scrap brown bits from bottom . Stir in milk and broth . Return meatballs to skillet . Simmer until it thickens and coats meatballs . Remove from heat and add sour cream . 
Meanwhile cook noodles . Drain and transfer to a large bowl .
Spoon meatballs over noodles .

I found these rebates on EBAY . A lot of alcohol beverages now give you rebates or coupon for free meat after you buy their product . If you buy on EBAY it usually saves time & money . This lot started at .99 with free shipping.

Giving myself extra money in my pocket . Every little bit counts .

I sold a snowmobile jacket on EBAY last week . I never wore it . Now I'm trying to sell a huge boys lot of clothes & toys on a FB sell/ swap/ trade . I've had vehicle repairs and an upcoming wedding to go to. Making extra bucks on the side helps .

Terriyaki pork roast

3/4c Apple juice
2 tbs sugar 
2 tbs soy sauce 
1 tbs vinegar
1 tsp ground gineger
1/4 tsp garlic powder
1/8 tsp pepper
1 boneless pork loin roast

7-1/2 tsp cornstarch 
3 tbs cold water

Combine the first 7 ingredients in a crock pot . Add roast and cook on high for 6-7 hours or until it falls apart. In a sauce pan combine cornstarch and cold water until smooth. Stir into cooking juices . Bring to a boil ; cook & stir for 2 minutes or until thick. Serve

In the magazine she has a gray shirt , purple pencil skirt and green flats . I recreated this look for under $25. Tank from Old Navy is $9, pencil skirt is 2.97, flats 6.97. Plus in the magazine pic she has a cream color clutch . ( not shown in my pic ) I have plenty handbags & a clutch that will do just fine .

Aunt Liz's beans

1lb bag of yellow - eye beans 
1/2 lb salt pork , without rind 
1 medium onion , sliced 
1/4 c brown sugar 
3 tbs molasses 
1 tsp salt 
1/4 tsp dry mustard 
1/8 tsp pepper
1/4 c ketchup 

Place beans in a large pot and cover with water. Heat to boiling . Remove from heat  and let stand 1 hour . Add water if necessary . Simmer uncovered 50 minutes or until tender. Do not boil or beans will burst . Drain , reserve liquid.
Heat oven to 300. Cut salt pork into pieces ; layer with beans . Add onion to the bean pot or ungreased 2 qt casserole dish . Stir together remaining ingredients and 1 c reserved liquid ; pour over beans . Add enough of reserved liquid or water to cover beans . Cover & bake 31/2 hours . Removing cover the last 1/2 of baking time . If beans look dry during cook time , stir .

Creamy Mac & cheese

2 c elbow macoroni
21/2 c grated sharp cheese / shredded cheese
3 eggs 
1/2 c sour cream
1 10.75 oz can cheddar soup
4 tbs butter
1 c milk
1/2 tsp dry mustard
1/4 c chopped onion 

Preheat oven to 350. Spray 13x 9 baking sheet .
Boil macoroni until cooked & drain . Return macoroni to saucepan & add 2c of cheese . Stir until melted , while macoroni is still hot . Add eggs, sour cream , soup, butter, salt , milk, mustard and onions . Stir well until all blended. Pour into dish . Smooth the top & sprinkle remaining 1/2 c cheese . 
Bake for 35-40 minutes until brown & bubbly .

Rite aid coupon match ups 7/13

Having guests over last minute? Quick , yummy snacks and meals anyone can do .

Crostini : these are super simple and you can literally pile anything onto it . Good for a few friends over and wine .

Frocassia bread : buy Pillsbury pizza crust . Put on a cookie sheet . Add herbs ( basil , garlic , etc ) bake until done . Cut into pieces . Serve with dipping oil.

Stuffed green peppers ( my recipe) : 4 G peppers , wholed and washed . Cooked turkey burger with Italian seasoning . Rice a roni garlic and herb rice . Spaghetti sauce and shredded cheese .
Preheat oven to 350 . Layer peppers with cooks rice , turkey burger , spagetthi sauce and cheese . Cook in oven 10 minutes until cheese is melted .
Serve with a side salad and bread .

Pizza : store bought pizza crust , spaghetti sauce , cheese and toppings . Super simple . Get kids involved and makes ALOT.  

Aunt Liz's spare ribs

I family pkg of boneless spareribs 
1 can pineapple , drained
2 cans tomato sauce ( 8 oz)
1/2 c thinly sliced onion
1/2 c G pepper
1/2 c brown sugar 
1/4 c cider vinegar 
1/4 c tomato paste 
2 tbs Worcestershire sauce 
1 garlic clove 

Place ribs in a slow cooker . In a large bowl combine all ingredients and pour over ribs . Cook on high up to 6 hours until done .

Grandmas corn chowder .

1/2 lb bacon 
1 med onion 
1/2 c chopped celery 
2 tbs flour 
4c milk 
1 can cream of corn 
Lb of red potatoes , peeled , diced
Salt 
Pepper

Fry up bacon . Let it cool and crumble . Save 3 tbs bacon drippings . Add onion and celery . Cook & stir until tender . Remove from heat . Blend in flour , put back on heat until it bubbles. Stir in milk until it boils . Add corn , bacon and potatoes . And salt and pepper to taste . Cook until potatoes are cooked . Take off heat and serve with bread .

Blueberry - peach parfait

1 box vanilla, lemon or banana instant pudding ( your choice )

2 c milk 
8 shortbread cookies 
4 mason jars or parfait cups 
1 1/3 c fresh blueberries and peaches 

Mix up pudding and refrigerate until ready . Crumble 1 shortbread cookie in the bottom of mason jar . Top with some pudding , sliced peaches and blueberries . Repeat layering with a second cookie , pudding and fruit . Do for all remaining cups 

Cobbler

Jam : 2 pounds fresh strawberries . Cut into 1/2 inch pieces .
2 c sugar
1 tsp lemon juice 

Biscuits : 1 3/4 c  flour 
1 3/4 c baking powder
1/4 c sugar
3/4 tsp salt  
6 tbs cold butter , cut into cubes 
3/4 c heavy cream , plus some for brushing

Jam 
Cook strawberries , sugar and lemon juice in large pot over medium heat . Stir occasionally , until reduced . About 12 minutes . Let it cool completely .

Biscuits 
Meanwhile , preheat oven to 350. Whisk together flour , sugar, baking powder and salt . Mix in butter until it's the size of peas . Add cream with a fork until dough starts to come together , but it still crumbly. Turn out on a work surface ; knead once or twice to make it smooth . Pat dough into 8" round , about 3/4 inch thick . Cut into 8 wedges.

Spread 3 cups of jam into bottom of a 9 1/2 inch pie dish . Arrange dough ontop , brush with remaining cream and sprinkle with sugar . Bake until bubbly and golden brown . ( if top gets too brown cover with foil ) cook about 45 minutes . Serve with ice cream or whip cream.

Revamped iced tea

Jasmine tea and orange juice
2 loose leaf or jasmine tea bags
2 cups fresh orange juice 
Sliced oranges for serving

Brew tea , strain and remove bags . Let it cool completely . Meanwhile combine orange juice and tea in a pitcher . Refrigerate until ready . Serve over ice and orange slices.

Chamomile tea and limeade 

2 tsp loose leaf or 2 bags chamomile 
1/2 c sugar 
1/3 c limeade juice 

Brew tea , strain or remove bag . Let it cool completely . Combine sugar and water in a small sauce pan . Bring to a boil until sugar is dissolved . Let it cool, then combine with limeade and tea in a pitcher . Refrigerate until ready to serve .

Rooibos tea and grapefruit 

2 tsp loose leaf or 2 rooibos tea bags
1/2 c sugar 
1 c fresh ruby red grapefruit juice

Brew tea , strain or remove bag . Let it cool. Meanehile combine sugar and 1/2 c water in a small sauce pan . Bring to a boil , stir until dissolved . Let if cool. Then add grapefruit juice and tea in pitcher . Refrigerate until ready to serve .

Have some fried chicken this wkd !

Recipe

3 tbs coarse salt
1 pkg of chicken ( whatever you want , mixed or breast )
2 c buttermilk 
2 tsp dry mustard 
1 tsp cayenne pepper ( if you don't like spicy , don't use it )
1 1/2 c flour 
2 tbs yellow cornmeal
Vegetable oil 

1. Unpack chicken , rinse off and put aside in a large bowl.

2. In another bowl whisk together buttermilk , 1 tbs salt , mustard, and 1/2 tsp of cayenne pepper and black pepper.
Transfer chicken to marinade . Cover refrigerate for 2-4 hours .

3. Leg chicken stand at room temp for 1 hour . In shallow dish mix cornmeal, flour, remaining pepper and cayenne together.

4. Heat a heavy pot filled halfway with oil over medium heat . ( temp should be 350) remove chicken from marinade , a few pieces at a time and dredge in flour mixture . Fry chicken in batches until golden brown , 6-7 minutes . Make sure the inside is fully cooked . 

Serve with sides :  options - coleslaw , corn , potatoe salad , green salad.

I work in a cheese factory and am part of sanitation . I like something that is going to last , I can smell over the chemicals I use & it's affordable . Tropical Dream

1 oz Malibu mango rum
1 oz Malibu coconut rum
1 oz Banana schnapps
1 oz Stoli vodka 
2 oz orange juice 
2 oz pineapple juice 
1 splash grenadine 

Blue Hawaiian 
1 oz light rum
1 cherry 
2 oz pineapple juice
1 oz blue curaƧao 
1 oz cream of coconut 

Gilligans island
1 oz vodka 
1 oz peach schnapps 
3 oz orange juice
3 oz cranberry juice 


Zesty potato salad

4 med unpeeled red potatoes
1 bunch of green onions, chopped
 Dressing: 2 tbs mayo
2 tbs sour cream
2 tbs bottled ranch 
1 or 2 tbs Dijon mustard
1 tsp tarragon vinegar

Place potatoes in a sauce pan ; cover with water. Bring to boil, cook 20-25 min. Cut into cubes , then place in a salad bowl. Add onions . For dressing combine all ingredients and pour over potatoes. Toss until mixed . Chill 1 hour before serving.
