12 oz penne pasta
1 tbs extra virgin olive oil
1 red onion
2 pkg sliced mushrooms
1/4 c sherry
2 tsp fine herbs
1/2 c beef broth
1/3 c light sour cream
1. In a large pot of boiling water , cook pasta until done .
2. In a large skillet , heat oil over med heat . Add onion ; cook 8-10 minutes or til tender . Add mushrooms and cook for another 10 minutes . Stir in sherry and herbs . Cook until liquid is evaporated .
3. In small bowl combine beef broth and sour cream . Stir in mixture to skillet . Cook for 5 minutes or until heated .
4. Toss mixture with pasta . Serve with bread or salad
